Yes you can. The same player can be represented on offense and defense (plus special teams if he is an OOP K/P) simultaneously.
Just cannot play multiple positons on the same side of the ball. So if, for instance, Moss' OOP card was at TE instead, you would have to make a choice between that and his WR card.
