If you go to the Missions tab in the Ultimate Team menu, go down to Ultimate Champion at the bottom. I believe the description I. The right will tell you how to get it. If not there, possibly when you click on Ultimate Champion it’ll lead you to the objective to unlock him along with his upgrades.

If I remember correctly it was for reaching like season level 5 or 10 or something and then just scoring a touchdown. Hard to remember after 6 months. 😞
