I‘ve seen a couple of suggestions where a LB “touches” the defensive lineman and then falls back to cover the middle. What is the point of the touch?

It makes the center react and in turn, dumbs out the o-line as their blocking assignments change

what scenarios does this happen? is it like before the snap cuz then it’s just an animation that hairs with the players because people do it in real life but in madden it has no affect

Yeah. The center thinks he’s blocking the LB, but when he drops back in coverage the center doesn’t know who to block. If you send a blitz, then the center might not get to the extra man in time to prevent a sack/bad throw
