Offense: Mark Brunell
Defense: Prez (that Xfactor is no joke)
Overall though, I'd probably say:
Offense: Quadfather (with Xfactor and persistent combo)
Defense: Champ Bailey (guy is a complete lock down corner. Pretty much can't throw in his direction)

100% agreeable, that quadfather is crazy
That I've used so far this year:
Offense - Quadfather: Obviously the X-Factor is super OP, but for some reason he just feels so much smoother than anybody else I have used this year (don't know why because on a Legends theme team I have played with guys who have better speed, agility, cod, etc.).
Defense - Prez: Again, the X-Factor smacks. He's a monster subbed in at CB4 on kickoffs and feels great as a user. Forcing your opponent into mistakes is how you win games this year, and he seems to force fumbles at the craziest times. Even if you don't land hit sticks with him just the threat of being lit up seems to scare opponents from running the ball or throwing his way.
This game is so ability based, and these two X-Factors in particular are bonkers.
Outside of the AKA guys, Peppers back deep at FS has really stood out to me. I think the combination of height and acceleration with Pick Artist/Deep Out Zone KO has caused him to make more plays than anybody else for me.
Quadfather is an absolute demon.
For defense though, I love cromartie. He plays incredibly well.

Don't know much about the other players but ( Champ "LOCK DOWN" Bailey ) I completely agree with you 100%. Plays every single game like his life depends on it for me.

Prez has been a big problem. I match up with at least one guy who has him every three games, and I can never run the ball because Demarco Murray fumbles every time Prez so much as touches him. It's ridiculous.
