I don't think you can go wrong with either. The main issue with Mahomes is ID bug that can prevent you from snapping ball.

Mahomes because of the Tier 3 ability bucket discounts he can get which Brady can’t get. Gunslinger, Hot Route Master, Pass Lead Elite, and Fearless for just 5 AP total.

I've used both and Mahomes is faster plus has a better release. Both are excellent and have great ability stacks though.
