Here are my predictions:

Hines Ward (Team Diamonds have started to get upgraded recently so it would make sense)

Peyton Manning (Just needs to be in the game)

Rod Martin (Another Team Diamond upgrade which would be fitting for his Super Bowl XV performance)

Joe Flacco (Because why not?)

Von Miller (Super Bowl 50)

Emmitt Smith (Super Bowl XXVIII)

Jim Plunkett (As much as we like to joke about EA favoring Raiders, they need a new QB)

Nick Foles (This would likely be his iconic OOP WR)

Franco Harris (RIP. This would be a great tribute, however it's unlikely)

Lynn Swann (Super Bowl X)

Jerry Rice (Super Bowl XXIII. 11 catches for 215 yards and a touchdown)

Joe Namath from SuperBowl III would be pretty cool, and I'm not even much of a Jets Fan. Or even Big Ben. Not a fan of either team, but still would be cool. I do like the Franco Harris idea as well and add that Terry Bradshaw would be pretty nice too. I feel the 70s seems to get overlooked quite a bit. Speaking of the 70s, we need at least 1 card from the 1972 Dolphins.
