How do you find the release stat on the card in MuT

I believe you click on them and go to attributes.

If you're looking at the main stat page for a QB, just scroll down and it will be on the right-hand side of the page.  It will be a clickable link as well.

For wide receivers I can’t find it

It is on their main stat page abbreviated as RLS.  Hope that helps.
