How do I get coins and other things quickly offline?

I don't have Xbox Live so I can only play offline. How do I get coins and good cards quickly by only doing Challenges? Please don't say that I'm completely hopeless.

Challenges don’t pay out that well, but just run through all of them since you can’t play online. Might as well just do them all
