Max protect (lb+up) and short routes. Best route is sending your hb on a flat. good to have a fb blocking or sometimes go out too. Blitz id the lb/safety coming in.
I don’t know if this is meta but it’s what I do
It's EXTREMELY frustrating to play against this all out blitz meta. Some things that have helped me, in no particular order:
- Slinger 1 release on your QB, this is hands down the best quick release for short-mid throws in the entire game. I've always sort of preferred the buttery smooth deep ball that comes with Slinger 3, however as discounted One Step Ahead (OSA) comes into fashion, i think we'll see more and more of the meta begin to shift back to Man defensive schemes, which will make the Joe Montana style Slinger 1 QBs all that much more valuable.
- Gotta max protect (L1 + UP on right stick), as was already pointed out and identifying the Mike is also crucial, although i tend to forget to do this as often as i should. If you still struggle, try some dual RB sets so that you can block with your FB and drop a quick pass to the HB in the flat.
- Obviously you'll want your receivers to have abilities that help to counter this, so; Short In Elite, Short Out Elite, Matchup Nightmare are typically what i prioritize, use what works for you.
- For specific plays, there's a lot to choose from, such as Mesh patterns that have various crossing routes, although one i've come to rely on a ton lately and has numerous man beating routes is this Chargers In play from Tight formation. Block the running back in case your opponent rushes 6, hit your receiver for a quick gain across the middle, or anyone that gets separation.
Hope that helps, surely i'm forgetting a bunch, but this great community surely has the answers. Take anything I say with a grain of salt, as i'm a first time MUT player and basically know nothing. Just trying to share what little i've managed to absorb from the big brains here.

I neglected to include a big tip that has helped me a ton -- if you have a single RB formation and wish to Max Protect, by keeping your RB in to pick up additional blitzers, you'll want to shift your line the OPPOSITE direction. So if the HB is to the right of your QB in the formation, you'd want to shift your O-line to the left and continue with Max Protect, as usual. Should buy you enough time to get the ball out.
Having Short Out Elite ability on your WRs will ensure they get separation and cannot be bumped/pressed at the line of scrimmage.
When people run man blitz, I usually use outside runs, motion slants, regular slants, zig routes and just underneath routes.
A man blitz usually has all blitzers coming hot in the middle, so I run Stretch Alert Lookie or any stretch play, but DO NOT USE THEM out of gun. EA hates the gun outisde runs.
Motion Slants are somewhat underrated for beating man, the person covering your motion will always slack off and with Mid (and or) Short In Elites, this is insane seperation.
Zigs are probably the easiest. Literally run a zig (preferably to your mid and short out) and it'll get good seperation too.
Regular slants are about a 50:50.
RB angles, flats or out routes are very good too. Usually the person who is manned up on the RB is a safety or LB, so already you have decent seperation from when you snap. RB underneath routes are old reliable for me.
Combo these with motion blockers, max pro. and TE blocking and beating man is easier than it was before.
