I’ll play people and go 3 and out…I’ll see what they are running and run that defense. THEY ARE NOT USER‘n. They play as a d line. I’ll do the exact same. So i’ll replicate it to a T because it worked for them against my Offense. Their first play will be a touchdown. What’s the deal here? How will things work 100% of the time for someone else but when I do it I get mossed?

Great question, the game has more rng (random number generation) in it than previous years. I'd assume your opponents are simply luckier than you. and the best thing you can say to upset an opponent if they message you is. "Nah, you just lucky"
It’s not just as simple as finding the one ”best” play. Defensive plays are designed to protect against certain things, and are weak to others. As an easy ex, cover 2 is good against short yardage areas (flats/mids) but easily beaten by sending 3+ deep/splitting the safeties.
There are a couple of other factors too, like on the fly adjustments the opposition is making (which you wouldn’t be able to see in the play call review), and how good their players are + how well they fit the defensive scheme. For ex, Richard Sherman is an excellent corner if you play a lot of zone, but not a great choice if you run a lot of man.
Lastly would be remiss to not mention thay madden is far from perfect, and a lot of people online use exploits/glitchy type plays they find on YouTube. It’s annoying but not unbeatable and would not use this as a first explantation or excuse.
You still gotta practice it.
You can't expect to just call something and have it work , well except Man Coverage. That'll always be there for the scrubs
I’m sure the person you’re playing has made different coaching adjustments then you and like the others said some d formations are better against certain things but not others

I run man about half the time. What’s great about it is there’s always someone open- so no one can accuse me of having an unbeatable glitch because no, you just messed up your read lol

Uh. No. Best blitzes leave the runningback uncovered. by open I mean uncovered, I user it sometimes but occupying the center and guard is usually more effective
There is a lot of adjustments. Go in to coaching adjustment and there a bunch of dif things that effect the stock play before you even load into the play.
Then once in the play you can audible. Like for example if they are running db fire 2 and run cross man or if they zone up one side of their man blitz. So on your screen you just see "nickel Cover 3" or whatever but that is not what they are running.
then there is also shading, qb contain/loop blitzing positioning, and play quessing which all could have a masterclass in each topic.
Pretty much nobody is running anything stock

Yes I know i’ve played the game before. Still shading doesn’t work for me. I’ll know they’re throwin underneath and I will shade that. I watch their defense and can slowly tell over the game what they are doing but none of it works for me. I can tell if they are in contain cause if your QB moves and inch out of the pocket you got 2 ends slamming you.

Well based on your inital post about getting one played, def do NOT shade underneath. Or at least dont do that just for the sake of it (You have to playing with saftey help, thats backed up with a user coverign the crossign routes). Thats how you get beat for those one plays especially since we dont have benchpress/One step ahead or any OP abilities. You got to take the underneath stuff with your user, manual drop hard flats, coupled with coaching adjustments.

It's impossible to cover every single player on every single play no matter what defense you're using. Especially if you're using stuff like Spinner and shit like that.
You don't have to and you don't need to cover everyone. You just need to smoother people long enough for the blitz to get there. If people are getting open when you run it, it's either by design or you're not good enough to run it at a high level.
Some people are just better at cheesing than others.
