Youtube is a better place to look as far as how to run them, it's to complicated to try and post in a forum with no videos.

There's a different scheme for each player type. You gotta find what works for you.

How to run them is something that would be hard to answer in writing. Tip websites/YouTube are great spots to understand the whys of the different schemes.
In regards to what the best schemes in general are, the Philadelphia Eagles is the most used playbook in the game right now I believe. The New York Jets is another really popular one, alongside the Patriots.
In Eagles, you have Bunch Offset, Bunch Strong Offset, Trips HB Wk, etc.
Jets have Bunch/Bunch Str
Patriots is one of the best Trips playbooks in the game having both Trips TE and U Trips.
