I'm not sure there's a specific threshold that makes gift wrapped useless once you reach it. But gift wrapped is more of a luxury these days than a necessity so I wouldn't worry too much about not using it.
Per abilities.fyi it increases the catching chance of the WRs, TEs, and RBs on passing plays. Depending on how exactly this is implemented in the code it may help even with 99 catching stats. As longs as everyone you throw to has good catching stats I think you should be ok.

You still need it if you high point at all and it's great for quick throws where you have very tight windows for anyone to hold the ball.
Honestly, if you talk to some of the MCS guys they are now questioning if you need GW anymore. I think if you have a high end team right now, you may not really need it. I don't notice open drops anymore with cards like Megatron, Zay, Kelce, and even a lot of the HBs seem to be holding on to open balls.

i high point a lot and without gw, the ball slips through receivers hands so many times
I've been fine without it, but I have realized with gift wrapped when I lead some passes when the receiver dives they catch it with gift wrapped and not without it

This is really one of the better explanations I have seen and it's a topic much discussed of late. Not the "requirement" that it once was, such as when Jalen Hurts dropped and included 0AP Gift Wrapped, which many of us went bonkers for at the time. Luxury seems to be a fairly accurate description, although I'd give up Gunslinger (at least on Trad4 QB Style release) before going without Gift Wrapped.
With 8AP on offense and our first tastes of 0AP Apprentice abilities, we've got so much wiggle room now, why wouldn't you run Gift Wrapped? I mean, if it's that or Linchpin / Jukebox, etc. i think it still makes sense. YMMV, but until further notice, i'm intending to keep Gift Wrapped. It's akin to not having Pick / LurkArtist on your DBs.
I haven't used gift wrapped since throw accuracies/catching/CIT hit >90.

I've found that gw isn't really needed at all anymore
As people have said it is more of a luxury
My DHB catches a lot of passes and never drops unless heavily contested and he doesn't even reach the 90 threshold
Only thing I've really seen that gw would help with is sometimes my guys drop diving passes
But that's it
I haven’t used it since before xmas and maybe I will just to see what happens. only really dealing with knockouts or misreading the defense. havent had a dropped pass in a long while
Haven't used gift wrapped since that hurts card and haven't noticed not having it at all. Running HRM, Set Feet lead and Gunslinger or Allen and my players catch the ball just fine.

I would say once everyone has 90+ catching, however I heard it eliminates no KO ability players getting KO on balls that should always be caught
