In your binder in game, go into items, click on any non-UL player such as a SB, Honors or Season Pass player.  The description on the right will have that same text.

hell, i’ve been playing every day and had no clue these descriptions changed all over(but also i usually dont go reading the cards either)

It has everything to do with EA actually.  The in game descriptions are what feed the data you see on the website.
