Does anyone have an opinion on these two? Does Edge do as well against the always-on X-factors as Secure? Debating whether I can downgrade my LT to one with Edge before Whitworth's value plummets further since we got that 97 on the come.

Bro, do yourself a favor and go check out the list of abilities an X factors here:
Edge pro is the same as secure pro on an edge blocker or a blocker going up against an edge rusher. The benefit of secure pro is that it works on interior lineman and against interior rushers. They do the exact same thing just from different line positions

Whoa, i do not have this same understanding. Edge Protector doesn't seem to counter or slow down Unstoppable Force style X-factors (or Colossus) to the best of my knowledge, although i haven't really tinkered with it much (or any) this year, despite seeing someone get a 0AP Edge Protector somewhat recently.
And as much as i have come to rely on MUTgg for descriptions and vital information, that entire Abilities section you linked can be extremely misleading. I guess i'm thinking specifically about Dashing versus Roaming Deadeye -- one is IMO clearly superior to the other, but MUTgg seems to get it backwards and suggest folks choose Dashing, versus Roaming. My experience has been the opposite, Roaming is the way to go. Obviously YMMV, but i was getting perfect blue accuracy passes on nearly every single release using Roaming. The other is capped at 40 yards.
Anyway, back to the original point, I guess i need to do some research and testing, but i typically try to avoid Edge Protector. I'm sure it's fine against stuff liek Edge Threat (or ETE), but who cares about any of that stuff, i need to prevent the insta-win sheds from X-factors and the only thing I've seen counter that or even hope to slow it down (at times, blocking is never 100% reliable in this game) was Secure Protector. I am currently running three of these on my O-line (Tackle, Center and Tackle) for a total of 2AP.
Please correct me if i'm wrong here, so much to learn in this game.
EDIT: after quickly glancing at the list, it's still confusing to me -- the description reads well, despite the current "Silver" ranking for Secure Protector. If these are essentially the same ability, why put it in the game twice? There has got to be SOME difference between them, no?
Advice from Huddle.gg
Rating: Silver
As we get discounted Secure Protectors, this ability will be much higher on the tiered list. Right now the AP cost isn't justified just yet.
They are NOT the same ability, from what I gather here.
Edge Protector: https://www.abilities.fyi/abilities/edge-protector

- Blocking_ChanceIncreaseResistanceOnNonEngagedPassRushMoves -- Grants the offensive player an improved chance to increase resistance vs non-engaged pass rush moves.
Secure Protector: https://www.abilities.fyi/abilities/secure-protector
- Blocking_ChanceBlockDefMoveOutcome_DefSuperWin -- Grants the offensive player an improved chance to block defensive move super wins.
- Blocking_ChanceBlockNonEngDefMoveOutcome_DefSuperWin -- Grants the offensive player an improved chance to block non-engaged defensive move super wins.
- Blocking_ChanceBlockStandardOutcome_DefSuperWin -- Grants the offensive player an improved chance to block standard move super wins.
- Blocking_ChanceBlockUpgradeDefWinToSuper_DefensiveMove -- Grants the offensive player an improved chance to block a winning defensive move from upgrading to a super win.
- Blocking_SecurePassBlockerInitialTimer -- Modifies the initial timer for secure pass blocking.
Big thanks to DJ for the relevant links and research help. 🏆😘
Based on the above, Edge Protector (EP) seems to be a direct counter to Edge Threat (ET). since ET grants a chance at ’non engaged’ wins
Secure protector seems to be EP plus more.
EP seems to get better better as your tackles gain blocking resistance to the edge threat. SP is more of an all around run/pass ability. except vs edge threat.

That's good info man, thanks for the research and update...I stand corrected.
For me, SP.and EP. Really don't perform much differently. On top of that In think the card itself determines wins/losses more than the abilities.
For me. Whitworth gets beaten too often no matter what abilities I have on him and it's been that way for years in Madden.

For me, it's Secure Protector or bust. Nothing really stops these X-factors, I believe you're spot on correct with your assessment. I'm just trying to slow down the insta/super-wins off the snap to give myself a chance. Absolutely have to set up blocking adjustments pre-snap, or ideally use Play-Action blocking to improve things on basically any play. I don't understand how or why, but play action seems to improve blocking tremendously.
Regarding abilities, Post Up might be the other useful ability, typically on either Guard, especially if you play against a ton of Dollar defense, the double teams should help blocking wins a fair bit in specific scenarios.

I have seen players increasingly go to the run because of these x factors. if you block the inside stuffs, you can run up the middle and if you set up the blocking right, you can run stretch against these X factors. But yeah, I have SP on 3 of my O linemen now.

I do need to learn my blocking adjustments a bit better for the run game, but i think i've got the basics down, including running up the middle against dual Inside Stuff on both DTs, but it's a passing league after all, so my skills are extremely limited with this. I have a heavy rotation of HB Stretch in my diet, especially when i need to chew the clock in Superbowl Run game mode -- it's basically the ONLY thing i've played in weeks. No sense grinding my Comp Field Pass for x2 Legends packs... although i did miss out on a few coins, i never even hit Level 50 in Comp during season 4, stopped at 49(ish) after receiving the player (Vikings Zone CB?), who i almost immediately turned into Training value, oof.
It's probably because I just got my first opportunity to try and use Angry Runs (chose Emmitt Smith as my 30/30 BND freebie set reward), but i'm definitely running the ball even more than I was after getting 99 SPD CMC. Managed to grind through three Superbowl Run wins a couple evenings ago, in well under 3 hours. Although things have been super sweaty in that game mode lately. No more early round gimmes, easy / guaranteed victories against feeble opponents, it's all top end teams lately. Kids coming out and automatically kicking Onside every attempt, stuff liek that. Good times, but that only motivates me even more to try and grind them into the ground, by pounding the rock, using Heath Miller and Vanguard to ensure I get to the outside edge from dual-TE sets. This often results in a one on one against an opponent's USER, although it's not unheard of to have wide open lanes if/when Heeeeeath manages to pancake 2 or 3 defenders on a single play.
I feel bad using this too often and need to continue improving in the pass game, but wonderful option to finally have in my arsenal.
Sorry if i've said this 10x already, not sure i included specifics, I'm also running similar scenario as you: Left Tackle, Center and Right Tackle all get Secure Protector. Sadly I do not have big Sexxy Dexi OOP Center.
