Just a few ideas, looks like you are a pats fan so i'm only going to list pats players. Ultimately you should do whatever fits your playstyle or make one of your favorite players. Only 30 people or so get GTs out of the millions that play madden, and you only get it for a couple months. So you gotta do something that you will love without worrying to much about what other people want or like. 

Qb - Jerod Mayo for a fun OOP Qb, Bailey Zappe, or Malik Cunningham

Hb - Rhamondre Stevenson, Fred Taylor, Rodney Harrison FB?

WR/TE - Moss, Devante Parker (random name, but he has kind of a meta build as a tall slender receiver) Gronk

Dline - Vince Wilfork

DB - Chrisitian gonzalez, moss, ochocinco OOP card, Ty Law, Dugger, Rodney Harrison 

I hope they finally let you make a card. Sorry this has been a hassle for you when it's supposed to be a super cool experience. I'm assuming they didn't let you make richardson because he is already getting a golden ticket or possibly a card in an upcoming promo.
