The best and obvious options might be all taken. For example, Vita Vea TE with FB secondary position. Or tall DBs such as Parham, Evans or Bavaro. For QBs, maybe there are still available McNair or Doug Williams, they both have traditional 4 release. Cool options would be ROLBs Bo Jackson or Luck. An unexpected pick could be Skowronek, a WR disguised as FB - the perfect receiving back.
