What do the gold coaches that you can buy on the auction house or get from the team set offer that the base silver coach you get to start the game doesn’t? Not the coaches with stat boost chems, just the team coaches. Do they offer a team chem or something? Why should I trade my silver Mayo for the Gold Mayo?

Great question, one i have often wondered about. I think it's merely a way to differentiate between the freebie (BND) coaches that we get, versus the ones that can be sold. I'm not aware of any actual in-game differences, shy of the color of the card art.
Nor am i aware of any reason why you would want to swap out for the same. If the Niners lose week 1 to the J-E-T-S, i'm probably going to have to bench BananaHands and hire Mike McDaniels, the real offensive genius, or perhaps DeMeco and/or Robert, who are legit leaders of men. I hope Kyle can learn someday, but i have some serious doubts.

As peatrick says, I don't know of any benefit from the gold over silver coaches. I think it was a few years back they gave boosts but now they appear to be strictly cosmetic and only offered for sale/exchange so you can change your coach if you want to
