Honestly, all the blocking is essentially timer based, so don't stress too terribly much about your players. Generally speaking, in a perfect world, we'd prefer our O-line to be at or above that magic 300lb mark. Weight definitely matters when it comes to blocking calculations.
As far as actual blocking stats, the only ones that truly matter are; PBP, PBF & RBK -- make sure any lineman has all three of these at or above the minimum 80 threshold.
- Pass Block Power - directly calculated against the pass rushers Power Move (PMV) = Bull Rush move
- Pass Block Finesse - directly calculated against the opponent's pass rushers Finesse Move (FMV) = Spin & Swim moves
- Run Blocking - assuming this is high enough, the RBP & RBF don't really seem to do all that much
Specifically for your Center, the Awareness trait can be beneficial, as it will replace the lowest player's Awareness rating across your entire O-line. Strength should matter (on both offense and defense), but doesn't seem to matter a whole heck of a lot. You can notice it at times if there's a massive disparity between the blocker and defender. For me, personally, the STR stuff only seems to show up or make an impact when my FB gets to the outside and then you'll see him demolish a DB.
There's plenty of 82-83 OVR lineman that will hit all these minimum (80) blocking thresholds, meaning they should show up for you in both run and pass game.

Hope that mostly makes sense. Power move is basically bull rush, while finesse moves are spin & swim, the blocking stats I listed are how we hope to counter that. Realistically speaking, due to the nature of double A-gap blitzes, have four pass rushers versus three interior O-linemen, we're basically screwed. Use Stretch and Outside Zone runs, IMO. Maybe Jet Sweep.
