81 Evan Engram & 80 Kyle Pitts
I have 80 pitts and greg olsen. I was going to go for 81 engram until 80 olsen, I kid you not, took a tough catch in tight coverage and had four defenders fall off of him...for a 98 yard TD.
I have Pitts and Olsen. Pitts has been able to break a few for long gains and breaks a lot of tackles. Olsen is great for short yardage.

I'm a sucker, 49ers bias, so i'm rolling with 85 SPD (83 OVR) George Kittle, for the time being. Although I was subbing in Juice (FB) to play TE. For your purposes, you might want to poke through this list (all TE, sorted by speed, 80-85 OVR) and choose your favorite. Below are random highlights, using PS5 pricing. The players in bold are currently on my roster at this very moment, although i would say Evan Engram is easily the best available, especially if you can scoop him for 40k (or less).

83 Mark Andrews is very very good.
Donald Parham Jr is ag great budget beast. With Dan Campbell as head coach he even hits the 80 threshold for better route running moves for both short and medium route running. He is 6ft8 and 240 which helps for blocking db's even though his blocking stats are not the best. He is only around 30k and that is pretty hard to beat for a budget player. Downside is he is 79 speed and accel but this is workable and you can scheme around this flaw.
Also free Witten has been a beast for me. Hard to beat free!
