which cards have the best abilities? not the baked on abilities, but cards we can modify? seems like were to the point where everyone has a lot of them on offense and defense

We are just now (within past 1-2 weeks) seeing the very first cards with actual Abilities, not to be confused with X-factors, which can also start ON in some rare instances... such as with the AKA promo.
On defense, look for DBs with Pick Artist. On my D-line, i'm using Mark Gastineau with 1AP Blitz, which starts ON, as it seems to significantly help my entire defense's pass rush, eliminating the ability for opponent's O-line to build up any type of blocking resistance. J'Ayir Brown (SS) has 3AP Mid Zone KO if that's more your style, i've been trying that rather than getting more PAs onto the field.
On offense, not many abilities really make much of a difference, but you'll definitely want Gift Wrapped on your QB. That should basically be considered a requirement, no matter if it's September, October or even April, May, June, July -- we always want to invest 1AP into Gift Wrapped. Beyond that, Wes Welker with Slot Apprentice (or perhaps Matchup Nightmare) is useful. Achane (HB) is the only card in the entire game that gets RB Apprentice, which will allow you to throw Texas routes and such from backfield.
Sorry for the rather disjointed list, this is by no means complete, just what i've managed to pluck from my aging memory. Lemme know any questions, hope that mostly made sense.

thanks for this, i appreciate it. my lbs cant do anything besides swat the ball away when it thrown towards them, and even then they only swat it a few times

it's not you, basically all defenders this year have been swatting the ball away, left and right, left and right -- which is why i'm seriously considering removing the 3AP Mid Zone KO, so i can get more Pick Artists on the field.
Unfortunately, there's no such thing as regular LurkArtist ability in-game at this early stage in the year, only the X-factor version, which typically does not start ON, so feels liek a waste of an X-factor slot. The high end comp players are running a lot of Dollar, it seems. Getting five-six DBs on the field allows more opportunity to have actual Pick Artists. I cannot afford all the high end LTD corners that actually get 1AP Pick Artist, but it won't be long and we'll all have it. For the time being, it costs extra.
