What happens if you accept it? Like do you lose points still? Do you gain points still? Weird that it's the only mode that has it.

I'll take a stab at this. Hopefully you were truly asking and this isn't sarcastic.
A sweat is a player that's gonna be a tough game. We throw the word "sweats" around like insults, but really its a compliment saying they are good at the game.
A cheeser is someone who exploits the poor AI and mechanics of Madden. Not using football concepts, but rather finding glitches in the game that EA hasn't patched. The route stem glitch is an example of this.
A "sweat cheeser" are the toughest opponents out there. Not only are the good at the game and understand Madden programming, but they also pull out all the exploits/cheats and have no problem glitching the game in order to win.
