I would sell him, because as you said you just started MUT, so you could build a better all around team.

I feel like I would regret it as QB is the most important position to having success especially early on. Will his price drop off or do core elites stay high?

Sell it. The more QBs that come out, the cheaper he gets. You can make a pretty good team with some pieces and there a few budget beast QBs to work with.
TJ Watt is the same way. Best LOLB you can get but 250k+... You can get some people who are just a step below him for 1/4 of the price if not less

If your QB skills are already good enough, having a lower OVR QB won't hurt you at all in the early going. So sell with confidence, and buy back a QB of the same or slightly higher OVR later on for cheaper.
