I sat out MUT last year, would it be wise to collect golds and elites from each team to have in preparation of team diamond sets? or is that not a thing anymore?

We havent had any yes or no on whether its coming or not at all. So it may not be a bad thing but no official word yet

You should not be holding anything in your binder right now.
Market is at a high point so sell, build a coin stack and wait for EA and the pack buyers to make up around MF.
