What is air trucking and how do you do it? is it an exploit of the game and its annimations?
You can only "air truck" if the player is over the weight threshold, which I believe is 245 lbs. That means most HBs can't do it. The exceptions are guys like Derrick Henry, LeGarrette Blount, etc. Here's the full list of all HBs, FBs, and TEs, that can air truck:

The air truck is a fast truck animation from a ball carrier that can make tacklers miss and you can gain yards quickly with it. I wouldn't consider it an exploit, it's just an animation in the game that is only available to heavy players. If you use 245+ lb. players in your offense, that air truck is something you should use.

I do it accidentally, when actually trying to truck over a defender but they miss the tackle and I look like a shmuck, trucking nothing and no one. Not sure why it's a powerful exploit in-game, but I only ever saw it this year when prople were using the huge Most Feared Derrick Henry.
