Is there any way to stop players who just user a guy away from the oline so he can just run around it and sack you while your still in the animation to snap the ball? Just faced a guy who did nothing but this kind of play, I had like, not even 1 second to do anything, runs would not work, couldnt even snap the ball to make any kind of pass, feels like a exploit to me, any suggestions?

ID the Mike? slide protection. put rb to pressure side and have him block

Keep your RB (or two) in the backfield to pass protect. L1 + up on right stick for Max Protect. If you only have a single HB set, slide your O-line the opposite direction from where your RB is positioned. For example, HB is left of your QB, you shift line to the right.
And as pointed out above, be certain to id the mike... I very often forget to do this, but hopefully max protect will buy you a few seconds.
Also, try a Slinger 1 QB with Gunslinger ability, I think you'll find it's the fastest short and mid release in the game, best for countering all out man blitz meta. YMMV, good luck. You're certainly not alone in this mess. Blocking hasn't been great this year.
