I have joshua williams with the one step ahead light it up token and I feel like he gets cooked on in routes if hes shaded outside and vice versa. Should I even be shading at all?

Shading is important if you know the route your opponent is running or if you want to force the player a certain way. For instance, if you want to force your opponent to the middle of the field where your user is, you could shade outside for that.
If you don't have an idea of what route they're running, then I would just leave the stock shades on the field (especially if you're using OSA).
Each man coverage play in this game has a natural shade to them already...
Cover 0 is going to shade everyone inside
Cover 1 is going to shade anyone inside the numbers to the outside, and anyone outside the numbers to the inside
Cover 2 man is going to shade everyone down and to the inside
You can use those natural shades to your advantage in knowing where you need to help out with your user.
