Its a two fold issue.

Jerseys (and PBs/coaches/strats) are basically price capped cheap, so they get bought up pretty quickly.  You can always get these unis for 3 gold players in sets, so really as long as you have 3 gold cards (OVR doesnt matter), you can do the team set and get whichever you'd like.

TEN is the meta right now w/ the home field advantage, so those are always in high supply as theyre the most popular choice for home unis to get the aggressive blocking home field advantage.

Yea those you are just kinda stuck on.  

You can only hope EA brings those same alt uni packs back in a future field pass.  Gone are the days where they showed up in the TVP or had a set for em
