Is there any difference in Hit sticking if using a linebacker vs a safety if they have the same hitpower? Like if Nitschke and Bo Jackson who have the same 97 HitPower both hitstick a player, they have the same chance of causing a fumble?
Its all about the hitpower
Linebacker/Safety doesn’t really matter, having higher hitpower matters more. If someone weighs less they’re more likely to just get bounced off or have no impact. So maybe a slight advantage to Nitschke but it’s not much of a difference.

So whether the hit stuck causes a fumble depends on HitPower, but landing a hitstick in the first place relies somewhat on weight, right?

It doesn’t rely on weight as more it‘s a factor but yes.
Doesn’t matter if they’re a LB or Safety. Hit Power, size, and the direction/timing of the hit are all factors into creating fumbles.
Defensive players with a bigger frame (heavier/taller) will deliver bigger hits.
Also if you’re going straight downhill with momentum in space it’s your best chance to cause a fumble.
