They do matter. I don't have a link on hand for a master guide but here's a thread explaining the clutch trait that ucwarrior posted last year:

Some do, some don’t. Most of time it’s when the cpu control the player.
I would say that traits do matter, but they matter more on AI controlled actions. So for example, the makes sideline catches trait, if you click on and manually make the catch, you will make it, if you don’t and leave it to the AI then there is more chance you get that dumb step out of bounds animation if the player has a ‘no’ for that trait.
QB traits like sense pressure matter a lot more, essentially means how well your player will throw the ball in relation to how close the rusher is to him. That trait is harder to control unlike the previous one I described.

I know last year, UCWarrior did the Clutch one.
From what I recall, most of them are self explained.
Clutch in under 2 mins and trailing by 8 or less your players get a slight boosts to stats
High motor means players keep getting up or following if theyve been knocked down/out of a play
QB Sense pressure helps the TUP stat and how well they deal with pressure/abilities
Big Hitter means they throw hit sticks
Strip Ball tries a punch out
All the pass moves are if they get a "special animation"/do an extra move
Catches tell you the type of catches theyll do
Fight for exra yards means they try to fall forward
Cover balls just says if they know a hits coming how often they cover to try to fumble less
