How do I best the stupid man blitz besides doing max protect? I ran up against a dude who just called the same man blitz every play and I could never throw the ball and when I did it was an int. Any help would be appreciated.

That's the meta unfortunately. Henry dominates the Madden world with that defense. 2 plays is all he needs to run. Both man, one blitzing , one not but it gets home.
Slants and drags sure, also try to run the ball. Most likely guys who run those are in nickel so u have an advantage in the run game.
If you can, put fearless on your QB too and stay in the pocket, it will take away accuracy penalties from pass rush pressure
Block as many people was possible and get off quick passes.
I like quick slants, outs, whips, drags etc. I usually can get some pretty decent RAC if I make one guy miss. I have short in elite on my WRs so they make better cuts and get open quickly on that short stuff. I also try to run the ball outside to the edge to get around all the guys crashing the box. Also, if I identify the guy coving the HB to be across the field like the far safety, I’ll hotroute my HB onto a wheel route and get it to him quickly before the safety can get there which works a lot, and most players won’t adjust cause people running the same blitz over and over aren’t good. If they do I like a route crossing the middle right where the user who left to guard the HB was.
Corners, posts, crossers, etc. do work but it takes some time to develop so I usually protect extra people to try and get the ball downfield.
Though most HBs don’t have RB Apprentice or Backfield Master yet, texas routes work well too, especially combined with another slant coming across from the other side.
Any play can beat man, just motion black a reciever and block ur rb, run whatever play u want but keep and mind u don’t have lots of time. I also recommend getting a qb with fearless So then underpreassure don’t get to u!!
i've been having success with using the shift protection audible too. block the RB and then shift away from the RB (if in gun offset of some sort). don't have forever but seems to slow down the instasheds.
also 2 edge protectors are a must.
I have great success in u trips pats playbook, either the slot wheel, stock wheel from rb out of scat, or motion slants with a whip and a skinny post, I would also suggest lions playbook gun tight formations, with built in slants, drags or corners. C routes are killer this year.
if you have a good rb, just go goal line and run the ball and force them to switch defenses
The most consistent way to beat cover 0 blitzes is utilizing your TE or RB since they can not be pressed. TE corners and trail routes are very good vs man. RB out routes or the wheel routes that go to the sideline work if you snap throw(highball and toward the sideline).
Wr wheels work too if they don't shade down or put a purple out there.
One thing I do alot now is motion over a slot apprentice crosser with a slant from the opposite side.
Also the most important thing is abilities! EA has made short in mandatory and set feet lead is also very helpful.
