I get on every weekend and grind for about 6 hours. Besides challenges, what are the best things to do to maximize my coins?

You may want to see what current prices are for any golds and rookies that you have in your binder and see if you have any of the expensive, high demand cards so you can sell in auction.

Flipping cards. 
Buying packs is a waste of coins and if youre playing anyway youll get the ones from the passes
