I've been using Stafford and he is annoyingly slow at making adjustments (blocking my RB... putting TE on a drag... etc.).
Is this the same for all QBs or is it a variable like their release... are there any decent QBs who are fast at this?

Oh my goodness gracious, i thought i struck it rich pulling Stafford on Day 1, but RUN AWAY. Run far, far away -- i regard that Matthew Stafford card as being basically unusable if you want to make more than just one pre-snap adjustment. Anything, i mean almost literally any QB in the game, right down to 78 OVR Kyler Murray will be vastly superior. Most of the QB Release types this year seem to be decent, but it's that nag calling audibles that prevents us from wanting to use the card.
I've been trying to collect any data or acquire knowledge on the various QB Release types this year, thus far i believe Aaron Rodgers and Lamar Jackson to be towards the top of the tier when it comes to specific QB Release types, although i have by no means done thorough testing, this is mostly based on feel after using a dozen+ different QBs thus far.
It's not all QBs thankfully. Definitely Stafford and I think one or two more. Most are normal.
Stafford, Brady, and Mahomes (the worst offender) have unique audible animations that take longer. I’m not sure of a full list but I know Rodgers and Josh Allen have been considered the quickest to audible with. Tebow is pretty quick too.
