MrAgentSochi has a great post showing each one (check it out HERE), but I can try my best to give you an explanation.
The difference between the releases is the time it takes from the start of the throwing motion to the time the ball is released. The chart in his post shows which ones take longer than others. Some are faster than others, and obviously you want as fast of a release as you can. Most every release is usable if you add the gunslinger ability to him, which increases the animation speed for a QB release, so with gunslinger I would say it isn't overly important, but without there is a definitely a difference when the defense is collapsing in on you.
They don't mean a thing other than the animation the quarterback uses to execute a throw. Each one varies in animation, some are better at throwing short and some long. Solid releases are slinger 1, 5, and 6. Maybe Traditional 1? I think one of the traditionals was pretty solid but I haven't used it.
Honestly I use RG3 for my tt because I'm too OCD to use a non Washington qb. He's severely outdated and has a shitty generic 2 release and I still ball with him. He sails some throws but I think that's every qb still lol.

Stafford has slinger 6 and i'd argue he has one of the worst releases i've seen

I mean the numbers say it's one of the better releases. It gets a little wonky on deep balls sometimes I guess but I'm using gen 2 lol. I'm praying for a Mark Brunell or something for Washington.

Yeah, I looked at the numbers too and was confused. But when you actually play with slinger 6 it feels like one of the slowest releases in the game. Every pass it feels like stafford is loading a siege machine before he releases.
