My personal preference:
CAR - I don't want fumbles
ACC - I want to get up to speed quickly
SPD - for obvious reasons

MUT mechanics are sometimes different than Franchise Mode, but I’ve found that speed doesn’t really matter that much in a heavy power back.
I was experimenting with a TE converted to HB, and even though he only had 84 speed he would usually go for 7-9 yards a carry easily. He could also swerve and make defenders miss pretty well, even with only 78 COD.
He was 6’3 and 257 lbs, so basically the same physique as Derrick Henry.
