I run all of my solo battles on MVP. I just found out that the 'normal' solo battles are tracking nicely, but the difficulty-dependent ones are still at 0. Anyone else having that issue? I only do the solo battles because of the high bonuses at 20/25 wins on MVP or higher.

I've seen a couple other people have the same problem. The thread you linked has one person on xbox reporting the same issue. So it might not just be a playstation issue.
It isn't all PS5. I am on PS5 and my "MVP or higher" are tracking fine. I always play the first 25 on MVP and then switch to Rookie to get any Stat Objectives that I haven't already achieved, usually the Fumble one. I have done 16 Solo Battle so far this week, and I am sitting at 16/20 on the one, and 16/25 on the other.

Just keep adding your info to the topic on the EA website I linked in the OP. That will probably generate enough momentum for them to fix it.
Xbox here i have noticed that everything else tracked. but, my veteran and MVP aren't tracking at all. So is there any reason to play solo anymore ?
Yeah, you still get CP and it counts towards the stats. In the end, you will miss about 30 CP compared to the normal progress. For me, that means missing out on Purdy and 25k XP
