I just recognized that there’s no more snowflake offers at all so what is the point of playing that mode Tis the dang season until January 4 if you can not use the snowflakes on anything

EA 100% confirmed over a week ago when the Ghost dropped Snowflakes will indeed expire on the 25th and turn to coins.Also Mut.GG more than once

Except they didn't do that. Still getting snowflakes and there is nothing to do with them.
