Hey Y’all was wondering what the pros and cons were to either of the schemes to help me decide

Bunch is easier to run, but it's more common so many people know how to stop it. There are defenses that are specific to bunch formations that make them easier to stop (ex Big Dime 146). 

U Trips is a harder offense to run but much more effective, since not many people use it or play against it.

I recommend u trips

I use bunch very successfully, Hurts is key in there.
