Online multiplayer games need to transfer a lot of information to ensure all players have an accurate depiction of what's happening in the game. Occasionally, there will be times when two players or a player and the server have vastly different depictions of what is happening in the game. When they talk to each other and realize this, there might be no way to fix the differences. This is when a desync error occurs.
I'll try to give an example of how this happen in madden. Imagine you call a pass play, you throw a pass to end zone and on your screen score a touchdown. But on your opponent's screen they manage to pick it off. There might be no way to tell which version of events actually happened so the game says it's a desync error.
Wish I knew more specifically about what sort of plays/situations are more likely to lead to desyncs because like you've said I have seen more of them in the past week.
