Acceleration is important too
The primary rating you're looking for is Release (RLS). Like most of Madden, there's some mystery in it. I've heard strength is a factor as well along with some other ratings but there's not really a good way to confirm this. Abilities like Short Out Elite also come into play in terms of getting separation on the outside after getting jammed.

Short out Elite -
I believe, from watching players with it and without it - Players with it give the CPU and excuse that they are "running a route" while getting around someone trying to press. Players without it will get around the press but not as quickly in my opinion.
Example - Moss has 99 everything. I was running Route tech and his baked in Deep out, he was doing well against the press and able to get some 50/50 balls. When I threw Short out on without the route tech he was clearly winning at the line and would get seperation even before 10 yards. Much easier to throw when you see him open after 7-10 yards than waiting until he is 15 yards out to see the seperation.
