Why is passing the ball so hard ?

Good day, everyone  

I just figured I’d come here and ask this question  hoping for some light to be shed on this topic

Before we even get started, I just wanna come out and say I am not a good player at all. I think I’m decent , I have managed to get to a few  Super Bowls . 

so what I don’t understand about this game is it seems that whenever I pass the ball to an open player all the sudden not the user, but the game itself has some defender just burst into the lane and jump up vertically like 2 feet for a interception or burst up to where the pass is going and pick me off I wouldn’t mind so much if it was done by the user also when I throw a ball to my wide receiver with great stats, most likely most of the time he will drop the ball yet when any defenders are running into each other and one is in the air he still will hold on to the ball and come down with it to get the interception. I’ve seen on Hail Marys or deep shots down the field three or four defenders all piled together and someone will still come up with a interception 
Let’s say I have Randy Moss for example and he’s being covered by one player with two points of less speed and less height  and I chuck uo a deep pass , nine times out of 10 it will be an interception. How can this be?    

I haven’t even begun to get into the time i  have in the pocket or what I’ve noticed  If you try to scramble out of the pocket how the edges instantly disengage  I just don’t understand why it’s so complicated? I feel like I’m playing the computer most of the time and not the opponent online, maybe it’s just me

I can't begin to understand this either. My defenders are always lost in zone coverage, or two steps behind in man coverage, and yet my opponents, who sometimes have lesser rosters, having seemingly one defender glued to every one of my guys. When I do get a receiver that utterly beats his guy, my quarterback takes that special opportunity to throw the ball nowhere near my guy.

Sometimes it's random chance, but I don't know why the game is so often completely against me when it comes to the coin-flip mechanics that determine whether I win the play after winning the scheme.

I just can’t figure it out. There’s so many different scenarios , I can have my player coming across the middle of the field  on a short 5 yard in route and the ball will just sail  directly to where the defender is if he’s anywhere near by or my player will catch it get hit and immediately it comes out and this is without the knockout ability . I can only imagine how this game will be when the knockout ability gets put into the game.
