Notes are still being added to reveals. The 3x 99 OVR LTDs are Russ Grimm, Paul Krause, and Ray Nitschke. The 32 other player items start at 92 OVR and require Theme Team Coins to upgrade to 99 OVR.

Gambler hasn't been in MUT since 22. I believe they renamed it to Gambit after all of the Calvin Ridley drama (just a guess). It's possible we could see a player get Gambit as a passive ability in the future, but like you said it may be too powerful…

Right. That's the version from previous years of MUT. If you read the description for both, they are the same.

Gambit=Gambler. I'm pretty sure it's the same thing, just a new name for the same X-Factor.
